A lot of medieval armor had a very narrow waist so that swords and weapons would just slide off of the cuirass. Not necessarily feminine, just practical.

Completely disagree with your point of skinny armor being for women. Depending on your era the fashion for men armor is slim wasted.

I don't think the idea behind "they're all dudes in armor" is that they're specifically male. The criticism is with humanoids in armor and mostly with oversized weapons. Personally I mostly end up preferring humanoid enemies anyways but I really don't think the fact that they're female coded or hollow suits of armor is a good faith argument.

Ruin Sentinels went from my least favorite boss the first few playthroughs to being one of my favorites when I found out how to 1v1 then 1v2

slight gripe with the narrow waist = femininity argument: it seems that way from a modern understanding of gender and gender roles, but medieval armor was designed exactly like that, with a pinched waist do distribute the weight of the cuirass on the hips, not just the shoulders. A narrow waist was actually a desirable trait in knights as well precisely because of this aspect of armor design, which started becoming a bit more extreme due to aesthetic and fashion trends (which, yes, were also reflected in armor). It is definitely a feminine silhouette in modern standards of design, though, and It is likely that that is what the creators were actually going for, so take this with a grain of salt lol

A narrow waist was actually regular armour design. By doing that you rest the lower parts of the armour on the waist instead of everything resting on the shoulders. That was why armour in the middle ages could be so much better then in roman times.

The Ruin Set in DS3 implies Vendrick set a group of Knights on a task to retrieve the Dark Soul which led them to the Ringed City, these knights would never return and so Vendrick created Golems in their likeness as an honour to them. These Golems are the Sentinels we fight in DS2. Also we can see these knights are now in service to the Judicators of the Ringed City.

Ruin Set Description reads:

“Armor of the company of knights who were sent to the Ringed City on an old king's orders.

The knights sought the dark soul, but were so soundly crushed, they had little choice but to swear themselves to the Judicator Giant.

The ill-fated company was later immortalized in a dark fable, inspiring the aspect of certain golems in whom their name lived on.”

I really love ruin sentinels moveset.. it's so fluid and graceful, but very powerful.. they exert effort flexibly and curved that it packs a wallop when it hits, like a whip! I love fighting these guys..
