The glaze appears effective, shines, nice color. I'm not a fan of white chocolate at all but I'd like to taste with the duck fat. I assume it's pretty much a ganache.
At the end I see it's in Dubai.... Plenty money spent there but any great talent? I may be wrong but Dubai to me is comparable to Vegas only newer and taller?

the part where he had to pick the tomato tip with the tiny tong was so annoying, just use your hand, does micheline star mean u gonna be dramatic about it?
