very little if anything to do with actual fermentation ?
I discovered fermenting meat pretty much by accident allowing meat to soak in a sweet brine longer than I originally intended. It is marvelous , so tender and delicious.
Just need to allow for a good filter vent. I am considering using 5 gallon buckets like making beer or wine.
If you have an open trough spout. Use an angle grinder with a cutting wheel to cut a trough across the underside just behind the lip of the spout. This prevents the water from running back back on the underside of the spout. The lid should be over the sink.

ОтветитьJust ran across this. Wonderful. But, since this is now 6 years later you CAN'T use see salt. I watched a documentary where scientists used an electron microscope and it showed microplastic inside the sea salt. What a shame. Plastic is ruining our planet.

I feed kefir and kraut and I’m learning to ferment foods so I’m curious if thru can also eat most of the same things as is for gutt support or I’m afraid it’s too much salt ?
