This is a 5 Century old North & East Indian method of making Cottage Cheese, which is mostly done in Bengal to make at least 50 different types of juicy and/or soft sweets. Indians call this cottage cheese "Chhana" or "Chhena". We curdle full-cream milk with lemon juice or calcium lactate. The water is not thrown away, but is strained and transformed into a variety of syrups or juices. We also knead flour with this water and make sweet or sour fries. 🥣😃
