THE VEGETABLE SOUP! Irish Farmhouse Vegetable Soup Recipe!

Just made this soup as it is cold and rainy out. Sooooooooo good. 👍👍👍👍👍👍👍👍👍👍👍

I make similar soup often but I don’t cook the veggies. Just fry them on low flame till they are tender. Then blend them, add stock and bring to boil. I like the fragrance better this way.

We don’t get parsnips but I use knol kohl. For thickening I add some cooked barley when I purée the vegetables. I also add some of the barley water along with stock. Occasionally I add few cashew nuts or some ground sweet corn. So I dont have to add cream, unless I have guests. Then I do, to show off the rich look 😀

Finally I add a mix of carrots, beans and peas to finish the soup. I substitute parsley with coriander (cilantro) leaves as they are more easily available and cheaper.

This soup is so versatile that we can play with the ingredients and the result will still be good.

Just looking at your soup makes me hungry and this is on this weekend’s menu.

Rustic vegetable soup. Yes, on a really cold day, the soup tastes especially good. Now I make it for my mother who is 101yrs old. A family favorite for generations.

Why would you blend veg soup ? Your right ! You didn’t grow up in a farmhouse !

Potatoes come in many sizes, to say three potatoes is not helpful.

The annoying thing is that he does not say how many this serves. I want to make for six servings, do I add half again, is this for four people, two people?????

Ah Donal, man after me own heart! Been looking for a recipe for farmhouse veggie soup since I left home 28yrs ago. Couldn't buy knorr or Erin soup mix since I left. Now I can replicate it and not feel half as homesick when it gets cold to freezing! Nollaig Shona Duit!

Just wondering how mine would come out...I used everything pretty much the same except I had broccoli that was lying around in my fridge so added those 😬. Hope to serve my 3 when they get home. The temperature is dropping here in England and this would be ideal to come home to as you describe Donal🥰

My mum made a wonderful Pea and Ham soup. It doesn't get very cold here in Queensland, Australia in winter but Pea and Ham soup was always welcome. I make it now but mum's was the best.

Oohhh My i just did the soup, it was delicious, but I didn't have parsnip so I put summer squash and instead of leek i use green onion. Thanks for this recipe was delicious my parents love it ☺️☺️☺️☺️
