Authentic Parm regg is just too expensive. I don't use the green box but I use American Parmesean and grate it myself. I'm sure it's not as good but it's good enough. Post covid, premium ingredients are just too high...

ОтветитьI make mine this way but I find the cheese sticks to the fork when I eat it, as well as the stirring spoon. I thought I was using too much cheese but then I saw this video and realized there's a ton of cheese. I guess sticking cheese is normal?

ОтветитьEven this is not a typical italian recipe, sometimes i like to make it just because kids like it. I put in the end an "idea" of ground lemon zest, it gives it some kind of freshness. Love your channel Chef.
ОтветитьJust tried making this for lunch and it was wonderful! Quick and easy to make, even for a first attempt, and every bit as good as I'd get from a restaurant. Using freshly-grated Parmesan Reggiano and fresh pasta were great suggestions! Now I just need to find a good substitute for the cream that is easy on delicate stomachs.

ОтветитьWhen certain Italian dishes come to America, the first thing Americans do….they put cream ! So too in this case. A delicious pasta that originated in Rome as “Tagliatelle butter and parmigiano”.
