My son visiting from FL to cny n his favorite. He use to buy at store. Made it today used less carrots, added vanilla, was outta olive subbed with olive infused lavender good thing wasn't strong. Lol no pecans couldn't find my walnut so left out the raisins. All in all turned out great. Thank u funny girl ur one of my favs!

This is an amazing recipe. When we got married, our venue provided a carrot wedding cake and it was so good. I never did get the recipe but this is so similar. I used crushed pineapples, and made the cake into a single layer cake in a 9x13 pan, and cooked according to your directions for modification. It came out perfect. Thank you so much!

Made this cake earlier this week and it's already gone. All my family loved it! It was sooo moist and delicious; don't skip on the freshly grated carrots (not the food processor---hand grate as she instructs) and the applesauce. The icing is very creamy and really compliments the cake. I had extra which made my hubbie happy. He kept it in the fridge and ate spoon full each day until it was gone. I personally would like a little more cinnamon and nutmeg but it's great either way. The cake is very light in flavor and not heavy on your stomach (not a good thing...keeps you coming back for more). The icing balances perfectly with the cake for a perfect sweet but not too sweet desert.

Hi Natasha, I really want to make this cake, but can you help me with something please?

When I try using an electric beater to beat the butter for the frosting, all the butter winds up lodged in the beaters and therefore it doesn't get whipped and lighter in colour, I made sure the butter was soft, but not too soft, so I don't know what I did wrong?
