I have been using a pressure cooker for years. My mother had one too. I wouldn't cook potatoes like that because a lot of the nutrients go into the water. I always steam vegetables in a basket inside the pressure cooker, using very little water at the bottom of the pan. The water does not touch the vegetables.

I always thought that the potatoes and veg etc. were meant to be on a basket above the water level in a pressure cooker? Maybe it is different for this pressure cooker or maybe I am remembering wrongly but I thought pressure cookers were steam cooking not boiling in water.

Practical tip: add two centimeters of water before you heat the pot, and add boiling water from the kettle. You can also lower the heat /turn it down by a quarter once steam starts escaping from the valve /and the pressure indicator has popped up. Then start your timing for the cooking process

"steam, heat and pressure". A pressure cooker only cooks in one way, heat. When the water in the cooker heats up and boils it gives off steam, this steam creates pressure in the vessel which then seals it. This allows the temerature in the cooker to rise above 100c - in a normal pan, this doesn't happen as heat is lost via steam which is allowed to escape and the water will boil dry. It is the very high heat (around 120c) in a pressure cooker which allows foods to be cooked quicker. The opposite happens in high altitudes or in aircraft. Here, water boils before it reaches 100c - this is why you never get a cup of decent tea on an aeroplane.

Seems like all the pressure cooker videos here are for insta-pots, I have an unused one similar to the one you are using and I want to try corned beef in it as I heard it is the best way to cook corned beef.

Thanks for the video. Please note that adding water to a pan that is extremely hot, will damage the pan. The surface will get permanently warped and will never again make proper contact with you hob. Pans need to be flat to be heated efficiently.

Increased pressure = increased heat, take water up a mountain and the increased pressure will cause the water to boil.

Hi. I'm looking into buying a pressure cooker. I need one that will cook a large chicken or joint of beef. Can anyone advise on what size I would need. There are 5 adults to feed so I imagine it would have to be a large capacity.
