ОтветитьIf you pop your breaded shrimp into the fridge for 15-20 minutes or freezer for 10-15 minutes before frying, you’ll find the coatings stay more “stuck” to the shrimp as you place ‘em into the hot oil & while the shrimp fry .., just a little helper thing😉… L O V E CRISPY FRIED SHRIMP in the SUMMERTIME or anytime !!! ОтветитьThis has become my favorite cooking channel since finding it two weeks ago. But as someone who lived on the Gulf Coast for a big portion of his life, I've got to add a few extra tips. First, it pains me to see someone just bite off at the tail, leaving all that good shrimp meat under the tail! When you get to that bite, just pinch the tail at the base where the little fins start, and give it a little tug. That little chunk of meat will just pop out with the rest of your bite. And it shows everyone else that you know what you are doing. Secondly; it's a major faux-pas to not devein the shrimp before breading/cooking. NEVER leave that little black vein in there...it's shrimp poop and has a very gritty texture and will never be a perfect bite. Thirdly; and the point was made in another comment too, you shouldn't refreeze shrimp if it's been frozen before. USDA says it's ok if the food was thawed in the refrigerator, but shrimp loses so much of it's quality if you refreeze (cells break down faster, etc). And 99% of the shrimp sold has been frozen, so unless you are getting that shrimp early in the morning right off the docks at Joe Patti's, it's been frozen.

ОтветитьI have a bag of really large raw shrimp in the freezer and it is coming out tomorrow!
ОтветитьIt can also help if you spread the p&d shrimp out to increase the surface area. Put 'em on paper towels so that they dry big and flat. That's what we used to do a long time ago (aka the Golden Age) at LJS.

ОтветитьLooks great! I would only add that if you buy the shrimp frozen and then thaw and bread them, DO NOT re-freeze them for later.
