ОтветитьOh man I love that chicken noodle soup, when I was in Bangkok last found a good one on Surawong road, one of those awesome restaurants where the kitchen is on one side of the street and the chairs are on the other side and they have to weave through traffic to being you your food. I miss Thailand so much, I’m so going to make that now.

ОтветитьIt was a Muslim lady in Phuket who sold this rice and turmeric dish (I could only see her eyes, the rest was covered). But she had a very friendly, and loving personality. I asked her about the ingredients. She told me she used coconut cream instead of yoghurt. She said that she came from a Malay background. I will try your version. It looks almost like a Thai-style biryani. But also, let's not forget that Thai cuisine is a fusion kitchen. Indian influences are definitely there.

ОтветитьThe way to cook panaeng the correct way you need add ground cumin in the paste or add in the pan when you cook the paste
Also need to add coconut milk in curry paste stir until grt the smell very good of the curry for few minutes (5-10 mins)

One question - here in London, where I live it is pretty difficult to get hold of fresh Kaffir Lime leaves. Can almond milk be used in place of coconut milk . Mama NOY is so adorable!!!
In mint coriander chutney we add 1 top white sesame seeds, Green chili pepper, and lime juice instead of vinegar. After making the paste we add 1 top peanut oil to give dense texture. It becomes really tasty.
