If you can't find Thai Basil don't please don't use Italian sweet basil why did she even say that completely different taste that's like saying if you can't find shrimp paste it's okay to substitute it with palm sugar.

Why shouldn’t the chicken be fried / seared first in the oil before adding the curry?
