ОтветитьYou do not compromise on the chilies! SACRILEGE!! There is no such thing as TOO spicy! If you cannot handle chilies and touch your eyes then you shouldn't even be in the kitchen! REALLY! As Mark Wiens says "If it's not spicy it's not worth eating!" or something close to that. LOL
There is no such thing as too spicy and no such thing as too much garlic! That's the problem with westerners. They eat cardboard meals and think they are spice kings. BBQ is for sissies! Got hot or go home! LOL
Woah, it's one of the basic dipping sauce here in the Philippines too. :)

ОтветитьI met this WONDERFUL Thai Couple who had the most AMAZING Thai Restaurant in SF CA (Don and Patra). Good gravy! The first time I went, I was so taken with the food... and the Cook (The Wife) was totally entertained by my wonderment. The Second time we ate there she brought out the Prik Nam Pla. It was delicious! She got a little mad at me because I wanted to put it on everything, even the Thai Ice Cream she made. Their Galanga, Lemon Grass and Tree Mushroom soup was to die for. I miss them and their food so much!!!

ОтветитьCan't wait to make this tonight! We're having friends over for a Thai food pot luck with friends... followed by dominoes! Shd be lots of fun. I can never make things as hot as I want for consideration of the others so, this will allow me to adjust as I want! Love your videos!
Update: I made a red curry on rice and a Pad Thai - both chicken - and folks really appreciated having the option to make things as hot as they wanted! Thanks so much! Now I'll have to try your other sauce. Cheers fr the other coast (Nova Scotia)

ОтветитьI see that there can be be a lot of variation in the lime juice and fish sauce ratio depending on recipe. Some other recipe I have seen instructed to have a bit more lime juice than fish sauce.

- I doused my cat in it - next morning it was a tiger
- I sprinkled it liberally on my car. It’s now 25% faster and the engine spins like a doused cat, that’s been left overnight.
- I showered in it and it made me sweat off 20 pounds forming a clone that now does all the hard, tedious or dirty work, and smiles and says thanks.
- I passed the bank holding the jar high and all my debts were erased or passed on to people I hold in grave disregard.
- I served it to my neighbour and she stopped talking at me for as long as she was eating it.
- I poured it in the sea and all the fish were like, aaah now we understand thanks for lending meaning to our being industrially processed and distributed!
- Sometimes I also put it on my food and it’s really good.
Prik Nam Pla on Pad Kra Pao + fried eggs + Thai Jasmine Rice.

Ответитьthat combination is something we often make in the philippines, too. we don't really have a name for it, but we definitely put patis, calamansi and sili together quite often

ОтветитьAfter chopping chillies wash and dry your hands then rub them over with fresh lemon juice. I save the half lemon skin after squeezing out the juice to rub over my hands. It takes away the burn from the chillies or the smell of onion after handling.

ОтветитьOMG We also have this here in the Philippines!! I don't think there's an official name for it but we also use this dip for almost everything too. However, our doctors advise against it because it's high in sodium bt this with any brothy dish or basically anything 🤤. Fish sauce and calamansi (lime is not common here) is a base for so many sauces here.

ОтветитьYou can put any peppers in vodka and strain the peppers out. The longer they soak the milder they get and it doesn't take more than a few minutes.
