I just checked out this restaurant's menu. I think he does it right for making money in this business. His menu is limited to a) "Snacks" - the savoury semane donut featured on this video (with five choices of fillings), some wings that we've heard are crazy good, and spring rolls; b) four noodle bowl choices; and c) five rice bowl choices. That's it. But as we can see on this video he does all of these dishes crazy good. They are all complex, require immense time and detail to prepare, but he does but just a few dishes but does them all extremely good so it appears. I think that's way better than having a huge menu variety and doing them all mediocre.

The chef should not use the MSG as most of Vietnamese restaurant has stopped using the MSG as it is not good for health and peoples have allergy with the MSG.

This kind of Pho is fusion style not authentic Vietnamese one - same as the donut which is the sweet donut back in Vietnam - this chef has made it fusion style put meat etc. turn it to savory style.

Appreciate Vietnamese Restaurants doing this. Starting to see a change for the better. A lot of the lazy families out there get overworked so bad cause of poor work in ng conditions, 200 items on their menu and don't focus on quality over quantity. They also 100% don't advertise and cheat the tax system very hardcore. This is a lesson also for old School Cantonese cooling styles. Change your menus. You don't need 10 different styles of fried rice, you don't 20 styles of similar stir fries ,10 similar styles of soup with the same pork, chicken broth. Your customers can't understand your menu and the people that works for you can't understand you. And the whole MSG, either cut it out and stop lying to the customers

Vietnamese food is one of the best Asian foods in the world....

Pho is something that takes time to cook and simmer long time from beef bones. It’s suppose to be a healthy hearty meal. But, I would be very cautious eating the pho, considering the amount of MSG, fish sauce, and salt he put in to get the beef broth flavor. (Notice Guys response when he saw the MSG?-He’s a chef too, he knows.)That’s scary to me. That’s a lot of sodium intake. Ever notice having dry mouth, thirsty and sleepy after eating it? I’m not talking about food coma from overeating either. That’s the after effect of too much salt and MSG and can be deadly to those allergic. I’m not hating on the chef or the restaurant, this just a FYI. Be safe.
