I bet that was delicious Jeff. I didn't grow egg plant this year but I fried a lot of squash and green tomatos from the garden. I lightly dredge them in some flour and spices to give them a little crisp. We had them for supper just about every night. Just couldn't get enough.

I've never tried to freeze them. I have frozen zucchini that I shredded before to use in zucchini bread later. I don't know if it will work with the egg plant. Most of the squash we don't eat fried either gets pickled in other recipes or I give it away.

Hey there Jeff, I am guessing processed Food and preservatives don't get a look in in your Household? Happy New Year to you and Wilma. It's -8 here with a deep Snow, Are you restricted to only growing things that are already in Oz ? Does Customs impact on availability of new things from overseas??? One last Question, How long are you married and, any secrets on a long marriage?? Simple eh? Kev.

These also have lovely flowers, we get the white egg plants from the market and stuff them with meat and roast them. You might be suprised however when I eat egg plant in excess I get an arthritis flare. Try a tiny bit of lime or lemon juice on them :)

Do you have to slice them lengthwise? Can't you cut them across?

Hi Jeff I love eggplants I tried growing them last year and they looked fantastic until the fruit started forming they grew to the size of a small lemon and then they went black and dropped off not sure what the problem was and it put me off growing them. You cooked those eggplants like the Maltese people do and we eat them like that or we cook them just like you did put them aside.Dice an onion and fry it up, add two  crushed up cloves of garlic small bit of anchovy and about a teaspoon of capers stir  then add 1/2 teaspoon curry powder, and 2 tablespoon tomato paste stir crumble a stock cube and continue cooking a frew minutes then add a large can of tin tomatoes ( or cooked home grown tomatos) and stir add 1/2 cup of water. Cook for about half an hour.  Get a large pot or deep frypan pan put your cooked eggplant in and cover with the sauce. Cook a further 15 minutes it will thicken up a bit. This is delicious hot or leftover could be eaten cold the next day,  especially with that wonderful Bread you make  to dip in the sauce.  You can also serve this with Fish and or Rice or mashed potato. Really Delicious.

i try to fry it without salt but i eat it with a sauce (soy sauce mix with lemon).delicious.
