Ohhhhh Marrrryyyy — you transported me back to the 1950’s in Vancouver, Canada in such a good way! My Brit mum would make this all the time, baked in our wood burning stove and we ankle-biters* would tussle over the deelish, sweet skin once the pudding could no longer burn your lips! Your classic recipe has just awakened such fond memories! Thankyou! *ankle-biter: Aussie slang for small child.

At my school, our class has a joke going around about Mary Berry where one of my classmates idol is Mary Berry. Our teacher is even in on it, she printed out a picture of Mary Berry and put it on the star of our Christmas tree and put; ‘Mary Berry put __ into the cake. (flour/flower) in our Christmas test.😂

This is great. My Mum used to bake it in the oven- using condensed milk. More modern versions cook it in a pan on top of the stove - absolutely appalling. Look to these older recipes, you will learn a lot. Rice pudding should Never be prepared on the top of the stove.

Soya milk also works really well for dairy-free rice pudding fans, with a splash of oatly cream if you like it extra creamy. Soy milk is one of the creamy plant milks.

Two hours in the oven is far too long. All you end up with is a congealed mess with completely burned skin on top. 😫
The website says 1¼–1½ hours.

I've never seen that kind of rice pudding before. It looks like British rice pudding is baked (Gordon Ramsay also has one), while American rice pudding is prepared on the stovetop. Baked may take longer, but at least you don't risk having a scorched saucepan.
Hi from the U.S., where 140°C = 284°F. What if you don't have a convection (fan assisted) oven? Do you bake it at a higher temp or for more time?

My daddy made this for us growing up, I regret not watching how he made it. Now after following this video I'll be making it, the great this about being myself I can eat the skin without my sister's n brother arguing who got the most. Bringing a year to my eyes missing my dad.
