Wouldn't happen because in canon Cal actually meets Anakin on the day he is made a Jedi Knight. Jaro congratulates Anakin and he notices a young boy behind Jaro with red hair. I forgot the title of the book this happened.

Slight issue Cal was already assigned to Jaro Tapal the day Anakin was knighted in the beginning of the war.

I think a new padawan would have been the best thing for Anakin in this time of his life. Cal would have really grounded him and I think he would have been a lot more rational.
