For the people who think rice cake is an iconic Korean food, I admit that but that doesn't mean Chinese people can't make rice cake. Cuisines are related to all different cultures all over the world. I respect that.
Rice cake has many different shapes, and versions all over China. We call it Nian Gao (年糕). Nian means the end of the year, and also refers to the Chinese new year holiday, which is around the time when rice matures. When we harvest lots of rice, we will celebrate it by making rice cake (as one of the significant food for the Spring Festival). To make it more pretty, we will make it in different shapes, such as fish, dragon, and peach (these 3 things represent wealth, position, and longevity)
Also, in almost every province, people make rice cake by grinding rice into powder, steaming it, and pounding it after. They just have different names. Example: In Yunan province (云南省), it is called Erkuai (饵块), which is made with pure rice. They also have a version that is made with pure glutinous rice called nuomi baba (糯米粑粑). They have been making rice this way for thousands of years.
Here are some examples from other provinces: 甜粄 (Chaoshan style), 糍粑 (Hunan style, my mom's hometown), 脚踏糕 (Shanghai style, and the areas around Shanghai. This type of rice cake is made of partial glutinous rice and jasmine rice), 白粿 (Fujian style)...
I just bought a Kitchenaid stand mixer so will use that to make this. I have arthritic hands too so I'm glad I don't have to pound the rice dough. Thanks for the video!

ОтветитьI’m sorry, I don’t want to be mean but… you Korean made me do it. Korean learned to make rice cake from China. Just go check out how small and infertile their country is, their veggies even the bean sprouts and cabbage the easiest to grow, are imported from China. Their country’s location and climate created their poor food and culture. Btw, they didn’t even have written words. The words they use were Chinese (they still use Chinese on historical places and documents), what is now called Hangul used to be used as a phonetic alphabet to learn Chinese, which is why Korean people can’t understand individual Korean characters bc they were made to be phonetic symbols, and all of their historical related studies and jobs force require people in these fields to know Chinese very well😂 Some more facts about Korean. They’ve been called white clothes ethnic, not bc they like white clothes, reason is very simple, they didn’t even know how to die clothes till WWI most Korean still only wear white clothes😂 their kings were only subordinate of Chinese Emperors, and cause their kings were too flattering, they repeated courted the Chinese Ming Emperor Zhu Yuan Zhang, so he gave them the Korean king and Korean officials the clothes that represent their subordinate identities of the Ming Dynasty (Koreans now saying these clothes are Korean “traditional clothes”, but the truth is those clothes are from China)😂 their loyal families and officials’ families have colored fabrics to make clothes were also bc they paid tribute to the Ming Dynasty more often than other dependent countries, every time they came, Chinese Emperors gave them many things as a reward, included fabrics. In order to flattered the Chinese emperor, their king even said “it’s the greatest honor to be a dog of the Ming Dynasty”😂does anyone really believe that this country could invent rice cakes and influence all different areas of Chinese people to eat that as a traditional food on New Year’s Day our most important festival😮 the history of eating rice cakes in China is even longer than the history of Korea (Koreans should stop claiming the history of Gogurgyeo as your own. You are two different countries that exist at the same time and developed from different ethnicities. Have you forgotten how badly you were beaten by Goguryeo)😂 Koreans are crazy now. From stealing traditional Chinese festivals to traditional Chinese handcrafts, now you start to steal traditional foods and clothes. I know you love traditional Chinese culture so much, but stealing is not a good deed, you should stop it. Ancient China, as a developed country in ancient times, has a lot of splendid culture and inventions. Some Chinese culture was introduced to Korea in ancient times and was used by Koreans, but what it doesn’t mean that is your own culture, you used for balabala years doesn’t mean it was invented by you, understand? South Korea and Vietnam, one is more crazy than the other in stealing and copying Chinese traditional culture in the 21st century, what about you two fight first🤡

ОтветитьI bought a soy milk press years ago, makes projects like these a breeze. No need to squeeze the nut milk bag. You just have to spin the handle which is much easier and doesn't require much elbow grease.

Its kinda emberassing to think a certain food, hairstyle or ingredient is linked to only one country and one country only and anyone else who presents it to the world is an imposter. Just do your research before you make unqualified comments on the internet, it makes you look stupid otherwise... Instead of the feeling of togetherness and equality, we as humans try to be as divided as possible for no reason. Its sad.

ОтветитьThank you! Glutinous rice and potato starch are gut healing foods (leaky gut is at the root of most auto-immune diseases) and have excellent glycemic index.
I have extreme Rheumatoid Disease and deformed hands, so use a soy block press. My hands are my enemy but I love making my own Korean and Chinese food without additives.
Good recipe, but looks hard to do haha… these cost approx $2 for a 1kg bag of rice cake where I live, so I will be buying store bought, hehe. But if I ever need pet different shapes of it, I would use this recipe, thanks.
