I think a Malaysian knowing about Indian food is actually not surprising. That country has so much culinary diversity and depth with Indian/Malysian/Chinese mix.

As someone who has cooked an authentic butter chicken many times here's my issues:

- used onions - i don't put onions in my butter chicken
- never fried the onions fully
- fried garlic too long
- never fried the tomato down until a dry paste
- put the fenugreek in far too early
- no cashews
- olive oil
- curry powder - say what?
- milk
- no salt
- didn't marinade the chicken then fry / grill it
- no garam masala
- no frying of star aniseed, cinnamon, bay leaf etc
- cilantro leaves

So much wrong with his butter chicken yet delivered with such confidence.

Here's how I do it. Cook together onion, tomato, chili, spices, in peanut oil, then blend that (I use immersion blender in the cooking pot), now add Greek yogurt and marinade the chicken in this over night. Next day cook it all in the pan with some butter, bring to a boil and simmer.

Never calling it anything other than white people sriracha....
