for 9 servings
8 oz good-quality chocolate (225 g), semi-sweet
12 tablespoons butter, melted
1 ¼ cups sugar (250 g)
2 eggs
2 teaspoons vanilla extract
¾ cup all-purpose flour (95 g)
¼ cup cocoa powder (30 g)
1 teaspoon salt
when making this i found myself needing to do 10-15 extra minutes but it still turned out really nice, fudgy. Really just the bsat brownies ever 😊

ОтветитьThis is the best brownie recipe ever! I made it two times and used cadbury milk chocolate. If you use a milk chocolate make sure to reduce the sugar (only 1 cup) tastes like heaven

ОтветитьBy mistake I gave more chocolate, 270g dark chocolate, 50% cocoa melted, 180 milk chocolate 30% cocoa, added thickly chopped. Baked 21minutes and came out unearthly, thank you Alvin!

After watching not only your videos but a lot of other people's I had to try your recipe. I'd been looking for the perfect brownie recipe for a while so... here are my thoughts.
Browning the butter is a great idea. Having a coffee ice cube is not necessary since there is already so much coffee but you do need to cool the butter before introducing it into the batter so I put a plain ice cube into the hot butter and later I diluted a big tablespoon of instant coffee in a few drops of hot water and added that into the batter not the butter. When I tried putting the coffee into the butter it clumped and I had to fish it out. Not sure why that happened?
I kept your chocolate proportions for the batter exactly the same but I reduced the sugar to 2 cups which intensified the flavors (I think 1 ½ cups would have been fine) and I put only 3 oz of really good dark chocolate chunks (Chocolove Strong) on top of the batter. As Emmy/EmmyMade in her video says "too much of a good thing is just too much" and I too never thought I would say that about chocolate but so be it! And I do love dark chocolate. This is just a "to taste" thing. And NOW!! The big reveal from me to you and the brownie world is 100 hours is just NOT necessary. I did keep the batter around for a few days but there was no change in it. I took a tiny taste every day for 3 days and finally I just baked it. And, after baking the brownies instead of freezing and cooling it for days on end here's what I did and it does the same thing: When it came out of the oven, as you directed, I covered it with tin foil. Since the object of covering and freezing is to capture moisture, instead, before covering it and before putting it into the fridge I used a clean atomizer and sprayed the surface with water and then put it into the fridge, not the freezer, to cool for a few hours, brought them back to room temperature and we ate them. They were wonderful. Baking dehydrates. French bakers have been brushing cakes with sugar syrups and liquors forever. Nothing new but I think it's a trick no one seems to think about any more. I'm sure I could have baked these immediately after mixing up the batter.
So, keep it simple! And just so you know this is now my GO-TO Brownie recipe!! Your proportions are perfect. Browning the butter is inspired
