For diabetics sweet potatoes are a wonderful substitute to starchy potatoes. The glycemic index is much lower, they aren't starchy so diabetics can take that factor out. Their high in fiber so don't cause the rapid glucose rises a regular potato does and are an incredibly healthy food!

That’s huge waste of foil. Just line a pan with one piece and bake potatoes that way. Foil is expensive where I live. We all need to think about saving non renewable resources.
