March recipe: Lemon shrimp orzo
1lb orzo
2lb shrimp peeled and deveined
4 cups arugula
1 diced shallot
1/2 cup white cooking wine
Sauce:
Zest and juice of two lemons
1/3 cup olive oil
1/2 tsp S & P
Mix ingredients for the sauce and set aside.
Boil orzo to preferred doneness about 9 min for my family. During that time sauté shrimp in two tsp of olive oil seasoning only with salt 1 min max per side. Transfer shrimp into a mixing bowl and begin cooking shallot in same pan. When almost finished add arugula to pan wilting it down then add white wine and scrape up the flavors from the bottom of the pan . If timed out correctly strain the orzo keeping 1 cup of pasta water and add orzo to bowl with shrimp. When the wine has cooked off add the arugula and shallot to the bowl. Add the sauce and stir well use pasta water to thin sauce if needed. I prefer to eat it out of a bowl while my daughter says plate! Enjoy
