I skipped flour because I didn't want any consistency. So as soon as i put the grated cheese into the heated milk it formed huge lumps and it didn't melt in spite of heat.

I just made this recipe and it came out great. I think you're onto something with using medium cheddar. I usually go with the extra sharp, but the medium did melt better. I made it for chili dogs and tater tots. I might use what's leftover for Mac and cheese
