Spanish Chicken & Dirty Rice | Easy One Pot Cooking Perfection!

I have made this several times … delicious! I only wish this had been included in your cookbook.

I don't know what I did wrong but I ended up with a mushy watery mesh. It still tasted nice but I'd like another go at doing it right.
The only part of the recipe I changed was using 4 thighs instead of 6 because there is only 2 of us.
Left everything else the same.

The only difference in cooking was I used my 24cm dutch oven (casserole dish) which is deeper than this one.

I go with 1 cup rice to 1.5 water when cooking rice normally. 900ml seemed like a lot of stock, it just didnt get absorbed?

Can someone shed some light? 😂

You've never steered me wrong before but this one is going to be a challenge. In my area we have Mexican chorizo, Salvadoran and Filipino. Spanish is hard to come by. I'll have to substitute with another cured sausage.

Is the oven temperature for a fan oven?

Just tried this recipe. The flavor is good, but I think 900ml of chicken stock is too much. My rice is too soft and watery. I have to put the pot on the stove to cook again. Kinda disappointed

Made this tonight for friends who are visiting with their two children age 4 and 8. They all absolutely loved it with the 4 year old saying it was the best chicken ever!! All that was left on plates was the lemon slices! Will definitely make this again :D

I often cook for my elderly parents and use many of Nikki’s recipes. They really enjoyed this last night and didn’t need any additional sides. I really like that every recipe I have created from this site has been super yummy but also worked exactly as planed without needing any adjustments. Really awesome stuff. (Australia)

Too much liquid for the rice. Follow your instincts and use the correct ratio of rice to liquid. Mine was too soupy. Flavor was good but again, follow the correct ratio of rice to liquid.

Wonder if this would work if you removed the skin first and rubbed the flavour onto the chicken meat instead? Cant stand the skin.

I love your recipes and have tried many with great results.

To me this meal has a few weak spots. I think the different flavors don't really go well together. The rice ended up a bit too lemony. And the chicken skin won't be crispy when covered with a lid or foil.

Can I make this on the hob as my pan handles are not oven proof
