I used 3 tbsp of white pepper and found it to be verrrry overpowering, to the point that my chicken was spicy hot. Perhaps I’ll try again using a significantly smaller amount but please let me know what else the culprit might be. Thank you!

Modern KFC has MSG in it as well, so if you really want to replicate the taste, you'll have to add a small amount of MSG on top of the 11 herbs and spices.

Actually this is nothing like the KFC pieces. These home made ones (in my Hyapientia) are fresher, juicier, tastier, less greasy and around 50% of the cost.

I BELIEVE THE PRESSURIZED COOKING IN HOT OIL IS WHAT MAKES THIS GREAT CHICKEN WHAT IT IS. I BELIEVE IT TAKES LESS THAN EIGHT MINUTES UNDER PRESSURE AND NO AIR FRYER COULD DO THIS.

I worked at KFC . The buttermilk and coating 7 times is not true. U just have to dip the chicken in water and coating twice . Also the powder gets mixed with dry powdered eggs. And There's a special type of oil that's used that the supermarket doesn't sell.

I went to Colombia to visit my wife's family for the first time in 2013 and went to a KFC in a mall there. They serve their chicken with disposable plastic gloves because people there don't like to get their hands dirty.

You had me 'cracking up'! For me though, certain meats have to be WELL DONE so the 'juicy' texture would 'feel' like it's not done. I would probably use a 'higher' setting because of that, not too much maybe 370 or so.

Don't use buttermilk it's expensive, only need powder milk and water with an egg mix. Dip in kfc mix dip in milk mix dip flour again. And oh cut back on the black pepper.
