ОтветитьThe stuff you're scraping away is called "fond", it's where a lot of the flavor is. That's why chefs deglaze the pan they're browning meat in with wine or chicken broth or even water, any cold liquid, which will break the fond off the cooking surface. This is the base for many sauces, also.

ОтветитьThanks so much for posting this video. I learned a TON! My gas grill is on it's last legs and I have a dedicated smoker. So I'm really considering buying a griddle to replace my gas grill. I know there are things to consider but based on what we like to grill I think a griddle would be perfect and then some. But I wanted to see what I might be getting into first and this video is perfect. Thanks again!

Shit man I got a propane grill in the house called a stove a gas stove one thing to be pit boss or master and a stove cook but hey your choice your choice I'd prefer hard wood than propane. All you got to do is put a cast-iron skillet over your hot coals man like on the trail we don't have no propane so we don't eat bullshit we got a tree I'll cook
ОтветитьGot my first griddle the other day. I got it used, all rusty. It’s brand new. I got it for 50 bucks. I stripped down real good and got all the rust off and started seasoning it with vegetable oil now it’s sticky and not necessarily even because I didn’t know what I was doing. Do I need to strip it all off and start over?

I live in a humid environment and cast iron will rust almost overnight.
I stopped watching when you pulled the thermometer....OMG exactly what i was expecting, you have no knowledge about food safety. Chkn has to be cooked at what temp to be served SAFE?? You neglected that. You failed with your chkn thighs on the flat top. Unsafe to eat. Unless you have the right education. AND, what is that bacteria that comes from raw chkn?? Ummmm , do some searching. Also, edit your footage, becz tha lady voice kept corresponding you.

also when i cook next time do i heat with oil i left on it get it warm and wipe it down again with oil before i start cooking
This is how all cuts burn with different seasonings. You had the griddle on too high from the start. Its cooking 101. not just griddle cooking. It definitely taught me how hot these get. You are 100% right about never turning the heat up all the way. Thanks! I learned a lot

Im just this year at, 52, perfecting my steak grilling, ribrub and smoking, and general charcoal cooking practices with different meats and veggies.
Now I feel like I'm being sent back to kinnygarden chemistry and engineering class to learn how to use this new apparatus/method.

ОтветитьTurn griddle on first. Pre-heat on 300 F low so that griddle does not bend.Make eggs and bacon and get comfortable with settings. Make hotdogs or hamburgers first. Dry Chicken salted on the sides, baste in BBQ sauce later. Any marinade creates a cleaning issue. Sauce cools down the heat. TIPS and TRICKS. RIGHT SIDE is hotter ? KNOW your ZONES before you cook for company.

ОтветитьI never turn my heat more than med. Most times low will cook anything you put on the griddle. High will give a steak a good seer then back to low. Chef Jerry
ОтветитьYou need the scraper with a handle. Much easier to clean the grill. I never clean as I cook but as soon as the food is off their griddle, I scrape it down in less than one minutes. Sorry, but you are making cleaning much harder than is it.
Ответитьanytime I cook chicken and add seasoning, I always add poultry seasoning. It makes any chicken taste great. It will not overpower the other seasonings you use but it is the best accent. Remember, cooking is all about seasoning. Give it a try. Chef Jerry
Ответить#1 safety. The main reason to get all chicken to temp is to kill harmful bacteria. Then the second reason is for taste. Calm your inner carnivore and cook chicken and pork. Go raw more safely with quality fish and beef.

ОтветитьMy flat to grill.. just got it cooked on it today. Followed the directions for starting for 1st use. Made burgers and some fryer vege’s. Now cleaning it as directed but my paper towel is never clean. I continually keep adding the water and wipe with paper towel. Paper towel is never white. Even when it looks clean and put my oil on and wipe it down , paper towel is black. Almost like it’s still dirty???? What did I do wrong??? Thank you Linda
