ОтветитьOne big mistake. Joshua is applying a Western approach to the onions. If you are going to cook Indian (specifically North Indian/Pakistani) food, you MUST brown the onions hard - get them to the point of burning and then add a small splash of water to stop the burning, and then repeat). Getting them really brown is essential. Joshua cooks them in a European/American way by just sauteing them. This is wrong.
But, let's get it right, chicken tikka masala does not have an 'authentic' version because it is not from India. It is an invented Anglo-Indian food that originated from either England or Scotland (there are arguments over this!)
