Muito legal! Adorei conhecer essa técnica, imagino que talvez mantendo a carne submersa nessa gordura deve ter a validade bem longa, ou mesmo depois de emergir e fechar a vácuo também, por que forma uma camada de proteção né!? Particularmente pra mim.. achei 10x mais gorduroso do que meu fígado suporta, ainda mais sebo., mas achei interessante! OBS>> a cor preta que a carne fica devido a esses temperos também não dá muito apetite, não! É feio na verdade., deiferente por exemplo do frango que fica com aquela cor laqueada caramelo escuro maravilhoso! Mas desse realmente ter um sabor maravihoso! Parabéns pela criatividade!
