ОтветитьI love how the "Western chef" takes on a basic white guy "howdy doody" affectation. Basically Asian Ned Flanders. 😅
I find the differences in style interesting. I think the "Western style" of measuring precisely and compartmentalising the cooking process can be instructive when first building familiarity with a new recipe. But ultimately the "Asian style" of going by feel, and cooking ingredients together is a desirable goal to shift towards after gaining some confidence and familiarity with a recipe or type of dish.

I have a Filipina “step-grandmother” and I tried to learn to make adobo (A braised chicken or pork dish with soy sauce, garlic, vinegar, and bay leaves) I asked for measurements but she taught me the power of Asian eyeballs when it comes to measurement. She just taught me to eyeball everything, I even learned the finger trick for rice from her. Safe to say, I now rarely measure when cooking. The only rice I measure water for is Japanese rice because the ratio is different.

ОтветитьI never knew that Italy is part of Asia. Here is my recipe for fresh pasta: Take a baby bath and fill it for about two thirds with flower, and make a hole in the middle. Put about thirty eggs in the middle and stir with a fork and gently mix the flour into the eggs. When the consistancy is about right to make a ball of it take the ball out and put it on the sink. (while doing it be sure not to mix the eggs in the flour, because you are going to make the pizzadough in the same container) On the counter mix in the right amount of flour untill the consistency is right for the pasta to roll into thin sheets either by machine or with a rolling pin. Cut the sheets into noodles, broader for pappardelle, and narrower for tagliatelle. Cook them untill they float et voila, fresh egg noodles

ОтветитьWhen I cook, especially with baking or making dough, I just add what feels right. It's done when it's done and as long as it tastes good that's all that metter
ОтветитьIn Europe we have exact units, like a handfull, a pinch etc, when they tought me cooking when I worked in a restaurant in italy they hardly ever used exact measurements. When you make something from a foreighn cuisine, measurements are very helpfull, once you have made something a couple of times, you can just throw in the stuff without measuring.
