How to Program the Homemade Course

How do I turn the rest cycle ON? I looked it up, but there is NO mention of how to turn it on.

I used to make a fat free bread with my old Home Bakery Supreme®
Breadmaker. Which course should I use to bake a fat free bread with Home Bakery Virtuoso® Plus Breadmaker BB-PDC20?

In homemade mode, how do do you convert conventional cooking times and temperatures? For example, if a conventional recipe calls for 350 degrees for 40 minutes, how long is that for the BB-PDC20?

Can you eliminate altogether the 'punch down' prior to a rise cycle? Also, is it possible to skip through a cycle that you've programmed? I find when experimenting with a homemade recipe that I like to program a cycle for longer and have the ability to watch and skip as required.
