I have skipped watching your videos for a while because of work. Now, I got a chance to catch up, and so happy that this one covers a shop in roppongi! I'll go to GRIPS later this month to pursue my master's degree, and if all is good I will also pursue my Ph.D there. Wish me luck!!

This series has been so interesting seeing how much work and love goes into producing such amazing food. The agedama made me smile, most fish and chip shops in England have a similar thing we call scraps, a lot of shops will give you them in your order for free if you ask, always nice with vinegar and salt. Thank you Paolo and the highly skilled staff for this excellent video. Best wishes

Great Vid. I like Tempura but a little goes a longways. I can't just sit and eat huge amounts of ANY fried food. Goes good though to munch w/ Sake. It's so weird- the people of Japan remind me of how the people in America were- in like the 50's. Just kind of a normal, nice, collection of people being people. We're nothing like that now, which is sad. Japan is a really good example for other cultures of how life should be lived, some people are better off $$ then others but it never seems to be by much and everyone works and does a job they like and then does whatever hobby they like when they are not working. Idyllic. Thanks.

Thank you, Paolo! I love the Behind the Counter series. Fun and refreshing way of interviewing workers. The old school American music as background gives it a nice ambiance. And of course the food! Would really love to come to Japan to try it myself.

I’m amazed by these septo-and octogenarians running this restaurant and being quite sharp in mind and nimble in body. Would love to try their tempura made from pure seasame oil without refined ingredients! ❤

Egg tempura is the best but can be hard to find. I know a shop in Fukuoka but have not yet found it here in Nagasaki.

What I admire most about Japanese people is their loyalty in their jobs (specifically shops like these), noticed how all of them have been working there for most of their life and it just shows how they all respect each other and most importantly love what they do!

Tempura restaurants in Tokyo are expensive. They serve lots of seafood.

In Osaka, they have a different kind of tempura restaurant that I really like.

You sit at an outdoor lunch counter, and the chef gives you a plate of tempura vegetables. That’s it. And as usual, they have a gallon bucket of A1 Sauce. The Japanese really like A1 Sauce.

Anyway, you get a nice plate of veggie tempura for five dollars.

The pride and craftsmanship in those restaurants is just heartwarming. Where I live these kind of restaurants are getting rare, the prices have increased (Especially in the last year) while the quality has dropped significantly. I find myself outing out less, primarily because of the quality.
