Everyone in the culinary world wants to go French... and as a French person, I don't get it. I learned those techniques very very early on in my life, now I wanna do something else lol I mean, it's great, but it's far from being the only great cuisine in the world. And the methods, honestly, are dated! Italian cuisine as we know it today evolved so much through World War II, the Tiramisu was invented very recently in history, and new staple recipes are added regularly. Italians are difficult but always seeking. In comparison, French food have been the same for so long. Even Robuchon's restaurant still serve the same courses they did in the 80's... seriously!!! We desperately need to move on. I'm signing up for an Italian cuisine course and even in the video selling it they were like "but we still do a lot of French cuisine" aaaaaAAAAAH!!!!!! Assez!
