It's funny you had issues when you originally did this. I used HD Loader on my ps2 in like 2003 and always ran my games from the HDD. I bought a dvd from a PS2 hacking website that came with a memory card and the HD loader software. The process had been the same for 20 years.

When copying a disc to the hard drive can it damage or delete data off the original disc ?

Better to rip your PS2 disc to an .ISO on your PC/laptop (if it has a CD/DVD drive!) with something like ImgBurn, then copy the .ISO over to the PS2 hard drive with a USB pen drive. Saves making the poor old PS2 LASER work so hard for a living and it'll last a little longer!

I used free mcboot with another memory card that loads an sd card. Works great but finding the right software and settings took several hours.. but worth it in the end. Slim ps2 off fleabay, dodgy aliexpress sd card memory card and free mcboot on magic gate memory card, around $70 total 😂

Edit: good solution in you cant find a ps2 hdd, dont bother with usb hdd, its laggy when loading 😂

YESSSS i wish more people messed with the ps2 homebrew kind of things. I have a 2 tb modded console with my entire collection that i had to go through a long tedious process to get working because mods only supported 1tb at most. A lot of the Programs to actually burn the game and convert it to a readable ISO to the console itself was ran by programs using java wihich is sadly dead. I remember having to dig through 10+ years or redit homebrew pages just to find a uploader that didnt run on java but is very bare bones. Even then some games were never fully supported. It was nice to upscale via the freemcboot and then upscale it again using the ps2 component cables and finally converting that component to hdmi. It was a process but games with progressive scan feature looked so so good
