Ingredients for Crust:
* 1 cup flour
* 1 tbsp sugar
* 1/2 tsp salt
* 120g cold butter, cubed
* 2-3 tbsp ice-cold water
Ingredients for Filling:
* 400g peaches, cut into slices
* 1/4 cup sugar
* 1 tbsp flour
* 1 tbsp cornstarch
* 1 tsp vanilla extract
* Zest of one lemon
For Topping:
* Egg wash (1 egg beaten with a splash of water)
* Almond flakes
* Sprinkle of sugar
* Powdered sugar (for dusting)
Instructions:
1. Prepare the Crust:
* In a large bowl, mix the flour, sugar, and salt.
* Add the cold butter and cut it into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs.
* Gradually add the ice-cold water, one tablespoon at a time, until the dough starts to come together.
* Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
2. Prepare the Filling:
* In a bowl, combine the sliced peach, sugar, flour, cornstarch, vanilla extract, and lemon zest. Mix well and set aside.
3. Assemble the Galette:
* Preheat the oven to 375°F (190°C).
* Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness.
* Transfer the dough to a baking sheet lined with parchment paper.
* Arrange the plum mixture evenly in the center of the dough, leaving a border around the edges.
* Fold the edges of the dough over the peaches, pleating as you go.
* Brush the crust with the egg wash and sprinkle with almond flakes and sugar.
4. Bake the Galette:
* Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is bubbly.
5. Serve:
* Allow the galette to cool slightly.
* Dust with powdered sugar and serve warm with vanilla ice cream.
