I swapped 2/3 cup dry lentils(100 grams) cooked in water since I don't keep canned in the cupboard. Tossed in some sweet potatoes too.

ОтветитьWhat do you do if you want to use dry lentils? When do you put them in? Do you boil them ahead of time and drain them? Could you cook them in the veg stock?

ОтветитьEvery time I watch you guys cook something I am inspired to the realization that a good cook doesn't need a recipe, just a familiarity with how to create tastes and flavors. You got to know your ingredients through lots of practice. Once you cut free of the recipe, cooking is such a fun and exciting art. Not to mention tasty.

I'm not a Vegan, but I'm trying to implement more diverse food groups than the basic veggie (mostly broccoli, asparagus or spinach), animal protein (chicken, eggs, fish or beef) and rice. This looks amazing and will start incorporating more vegan dishes into my diet. Thanks for the recipe!

Estofado de Lentejas is one of my favorite food and here’s the way we (Spaniards) cook it, takes more time but it’s much easier, and no need for chorizo, as you add the Pimentón De la Vera (paprika). It’s so simple, raw lentils in the pot, you add 1 onion 🧅 cut in 2 halfs, one green pepper, one piece of leak (optional), 1 full tomato 🍅 , 2-3 carrots chopped, 3-4 garlic 🧄 cloves and you cover it with water. You add salt, Paprika and virgin olive oil. And put it to boil, then simmer. If once the onion is cooked, you remove from the pot the onion, pepper, tomato and garlic and mash it along with some lentils and add this back to the lentils. You may add the potatoes 🥔 in small cubes in the las 10-15 minutes if you want. But I prefer to cook rice and eat the lentils with rice. It’s simply delicious. Try to cook one day Potaje de Vigilia (Chickpeas and Spinach stew). The traditional recipe includes Cod, but you don’t need it, or, you may go with the Veganized version that I prepare with tofu/algae balls. That’s also a fantastic dish.

Pan High Heat
1 and ½ tbls oil
2 cloves garlic
½ to 1 Carrot – (grate into pan)
1 x Beetroot (grate into pan) (add nice red colour)
4 x scallions ( cut fine)
Vegan Sausage ( chop fine)
1 x Tin lentils ( drain and rinse to reduce fart capacity)
Sauce
1 x 400 g Chopped tomato
400ml veg stock
2 x bay leaf
Seasoning:
½ tsp smoked paprika (creates oxtail smokey flavour)
1 tbls Tamari
Pinch black pepper
1 tsp salt
Serve with – Bread , wholewheat cous cous
Garnish: none
