One suggestion - you can use the Inter font system-wide (you can change it in Gnome Tweaks) instead of the Cantarell font. The Inter font is free (and open source I think) and looks close to the MacOS / Apple font.

When i started off with gnome i wanted the mac feel. After using it for months, now I came to love how gnome looks on its own. Only thing that i use now is an app called gradience which adds a material you/monet like theme to libadwaita
