When you truly like potatoes nothing beats a perfectly baked potato with a bit of butter and salt. So, you can taste the potato. Yum!

What a unique show! I enjoy all your detail that results in perfection, along with the explanations. I never thought about using a cartouche over the potatoes. I'm not much of a onion eater, but this technique intrigues me. Very nice presentation. You're a true artist.😊

Oh man. I’m so trying this, just with Earth Balance and veggie stock. Looks like it’ll go great with sautéed mushrooms and a roasted garlic, onion and pepper medley.

Personally, it sounds terrible! Potatoes baked in a liquid over mushy onions...? The whole thing sounds weird I'm sorry...a beef broth? Mushy potatoes and butter in between....? I LOVE experimenting w potatoes but think I'll pass on this one ..

Fabulous dish. I can see why, at the start of this video, he is so proud. It’s a little difficult. The onions, when you are done, will not look like his. The dish, when you pull it out the fourth time, will not look like his. It takes patience, and at elevation, takes more time. Be more sparingly on the ladling of the beef broth; it takes a long time to reduce. When it’s done, it is fantastic, but there are literally 100 great potato dishes that take half to a third as much time.

So the only instruction you missed is how long does it go in at 130 AFTER you’ve removed the paper. I believe it was the third time it went into the oven, but you didn’t say how long it was in there.

Delicious! That remid me of another fantastic and simpler French potato dish called "Pommes de terre sarladaises". Only potatoes, duck fat and garlic. 👌

And this is why I'll never be a great chef. Decent home cook? Sure. But I do not have the time, patience, or desire to spend 4 hours making 1 dish that I could get 80% of the flavor in 1/8 of the time and 1/20 the effort.
