am from the Philippines and on a budget currently, so I had some switches made to make this dish affordable for me. Instead of spinach I put in kangkong, Eden cheese instead of parmesan, regular tomatoes instead of the cherry ones. And oh my! it’s yummy nevertheless! looking forward to making the actual dish in the future ❤️

ОтветитьI made this and it was DELICIOUS.
However I cooked with small pieces of turkey cutlets instead of chicken (thats all I had) then took them out tossed red onions, mushrooms, a little bit of butter and sautéed them then added the chicken stock. Then I added the spinach and the pasta. Then let it boil all together until the pasta was al dente. Then Added the heavy cream, then cheese then red pesto and tossed the turkey back into the pot.
It’s absolutely amazing!
Made this and its sooo good and filling!

Make it even healthier by using Banza, which is pasta made from chickpeas (trust i have done so much trial and error research finding a pasta alternative and theirs is it) = more protein and fiber 💜

ОтветитьI finally realized that cooking for myself can be simple.
I gave up all that planning ahead and I just go to the store and buy a few veggies that look good or appeal to me and a couple of proteins. Bring it home, get out the sauté pan, brown the meat (if using) with an aromatic (garlic, ginger or onion) and often green chili, add chopped veggies and a little liquid (1/4 cp. or so), if necessary, bring to a boil, salt to taste, lower heat, cover and simmer for 15 min. If using fish add with the veggies and shred after cooking to blend in. Serve over rice or pasta.
Simple and always tasty. Fresh or quality frozen veggies don't need much flavor boost. It makes about 4 servings usually, which I reheat. Takes about 30 minutes or so. I've been doing this a couple of months now and really like how simple it is and tasty it is.
