ОтветитьKent, almost two years ago you told me to go to that General-Dollar-Tree-Store and buy a Skillcraft hard plastic bristle brush. Awesome advice! I run the sink water hot while I reheat my cast iron. When the pan is hot and the water is hot, I take my glasses off (very important), and under the stream of hot water, the pan goes. Steam rises and I use that long-handled brush to easily scrub my pans. Best purchase I ever made to care for cast iron!
ОтветитьYou keep saying "re-season it" but never say how to do that. What I know as re-seasoning is a process you don't want to do every time you use it. Care to expand on that?

ОтветитьSo we bought a brand new cast iron skillet to go camping with and it was wonderful it stuck a little bit when we first cooked with it but it was pre-seasoned it didn't have much anything on it really we came back home we didn't clean it while we were up there we just scraped a lot of stuff out and then we put it in the trash bag and we brought it home and now about a week and a half later I remembered we need to clean it and probably season it again so I'm hoping I can do this the right way and I think I just need to boil water get a soft scrub pad scrub it down and then dry it off with heat from my electric oven top and then put some oil and seasonings on it boil that a little bit or not boiled it heated up a lot and then wipe that out and that should seasoned it and make it nice again correct?

ОтветитьThanks for this video, Kent & Shan! I re-found my Grandpa’s old Iron Dutch oven and was trying to remember how to clean it. I be cleaned with a brush an one of those chainmale cleaners. Ill probably go back with the potato & salt method.

ОтветитьSoooo my grandparents pretty much never “cleaned” their cast iron. They would wipe it out with a paper towel every once in a while. Cook your bacon or sausage put your eggs right in the drippings you’re done. Eggs cleaned up all the grease… lol they where thin and lived into their mid 80’s

I messed up right from the start. I knew not to wash but boiling hot water really started the rust. I had to start over and I appreciate you letting me know I could fix it. ОтветитьI don't have any cast iron cooking items except a pancake griddle. How can I cook with stainless steel without food sticking without loading up with oil? I try use limited oils. I only cook with one skillet that is non stick. Someday I'll invest in one of those expensive cast iron skillets.

ОтветитьI do have a question, I tent camp a lot for several consecutive weeks at a time. When I’m camping at a dry campground water and fuel are better than gold, in fire ban season you can only use propane in which case having to heat water to wash dishes you’re using both precious things. What’s your advice on that, normally I just wipe cast iron out, scrub with the wooden spatula like yours and that’s it, I know it might sound gross to some but no bacteria is going to survive the heat the next time I’m cooking and after all I’m dry camping, things are different when you have endless supply of water and fuel. Other dishes like plates spoons etc don’t require hot water and they’re washed with biodegradable soap. Do you think that’s ok? What’s your opinion Sir. Thanks.
ОтветитьDue to my son’s food allergies and concern of cross contamination of foods, I do have to use soap in my cast iron skillets from time to time. But I ALWAYS follow that up with steaming off the water and then reasoning it the way you show. Thank you for showing us how care for our pans!

If that fails, outside to the sander and then having to re=season completely.

ОтветитьEvery time I wipe my skillet after reasoning, my rag keeps coming up black. I assume that is from excess oil. The skillet is not gummie and I do not feel any stick spots. But will my white rags ever NOT come away with some kind of darkness to it after wiping?

ОтветитьCowboy Kent! First and foremost thank you for the awesome tips! I made the mistake of not cleaning the cast iron skillet after cooking chicken in it in a reasonable time frame. I have done all the steps you mentioned and still have gunk, should I let the salt sit longer before scrubbing? Im praying I didnt damage the enamel. Thanks!
ОтветитьI just watched another video that explained why we season cast iron. It explained how polymers build up in your pan and how resilient they are.
Polymers are the material that bonds to your pan when you season it. They're the reason why your pan becomes stick resistant.
If your seasoning process was effective, a little soap and scrubbing will not hurt the effect.
The history behind the " no soap rule" was apparently due to the high lye content in the soaps of the the early to mid 20th century and before.
Since then we've moved away from using caustic soaps in favor of what we use in our kitchens today. The PH content in Dawn or Ajax isn't high or low enough to cause any significant damage to those polymers.
A degreasing agent or highly acidic soap may cause significant damage to said polymer layers in your pan.
The usual methods for cleaning most of your other dishes is just fine... according to the science at least.
However, if you like the flavor of the residue from past meals baked into what you're cooking today, then don't use soap.
All that being said, I'd like to hear other people's take on it too. I tend to be less traditional and more "okay... but why tho?". So someone might have a good argument as why it's destructive to your pans to use soap.

Ответитьwhat am I missing here - if I clean it right when I am done - I still have scrambled egg burned on the bottom part (it comes off nice from the sides and outter edges) and then my eggs are STONE cold ...... I have to scrub either way - and sometimes can't get it off - only scrambled eggs are my problem - and I really like them ! :( HELP ! I've done pot roast, steak, other things - but can't get this egg issues fixed
