1/3 cup flour
1 egg
1/2 cup milk
Salt
Sugar
Add some milk and mix, add the rest of the milk + butter after
That's great advice about mixing first with only a little bit of liquid. If you put too much, then the lumps are floating freely in the liquid, and the whisk can only push them around. But with only a little bit of liquid, the mixture is thick, and so the lumps can't move, and the whisk breaks them up.

ОтветитьMy Polish mother made nawelshecki (don’t know the Polish spelling but the were crepes)and filled them with jam and fried them in butter. There was nothing better. There was love in every bite of jam crepe and butter. But then she would chop meat and fill those crepes with that. And fry them in butter. There was no end to my mother’s love and frying filled crepes in butter. None whatsoever.

ОтветитьA spatula. It's called a "spatula". You use that so you don't have to pick up the crepe with your fingers to turn it.
