Native Dish: Mexican Chorizo Tortilla - NYC Immigrant Cuisine: La Malinche Tortilleria

In the midst of the pandemic, Tlaxcala, Mexico-native Jesús Delgado and his wife, Ilsel Garcia, took a gamble and opened a tortilleria & grocery store in Brooklyn's Sunset Park with the help of Ilsel's uncle. Jesús always dreamed of opening a tortilleria and Ilsel learned early in her childhood how to make tortillas by hand. The gamble paid off: they financed an authentic tortilla machine imported from San Luis Potosi capable of transforming fresh masa into golden, crispy tortillas, and upon opening in February 2021, lines went around the corner and demand soared.

As a way of preserving tradition, and feeding their team of dedicated employees, Ilsel serves her workers a well-known breakfast tortilla made with chorizo, sundried chili salsa, beans, queso fresco and fresh cut avocado. The result: a spicy and savory pick-me-up that keeps them going all day long.
