Yo, I just tried this and it turned out pretty great. It tasted a lot like Nissin's Raoh Shoyu -- a winner in my book! Instead of making my own tare from scratch I went for the lazy option and used some bottled mentsuyu + soy sauce. Don't have Hondashi, only Lee Kum Kee chicken powder but again, the mentsuyu takes care of the dashi components I figured. Also used the baking soda + spaghetti hack and that was...interesting. Definitely lacks alkalinity as I didn't add enough, but it smelled like I was boiling some wonton noodles! The negi-abura definitely made this dish; really that was the hardest thing to make lol.

ОтветитьThis recipe is awesome! I made my broth with 2 cups of water, 1 heaping tsp of white miso paste and 1.5 tsp of mushroom seasoning since I didn't have the chicken stock powder and fish stock powder. It is SOOOO much better than the seasoning packets!

ОтветитьThis is probably the easiest bestest ramen recipe I’ve ever tried. I actually had all the ingredients needed cause I live in an Asian household which helps out a ton- Anyway it turned out literally amazing and the flavor is soooo good, tysm!!

ОтветитьWell I watched this video about three years ago for the first time and I finally got round to ordering all the stuff to make it! And it was really good to be fair, I wont be using nori next time as it makes it stink a little too much for me, but I did some pork chops and sliced them and the egg made it amazing! it is extremely filling though and I couldn't finish all of it. Thanks so much for this video!

1. Why would you add 1/4 tsp of MSG to only one serving of ramen when you're already adding 1 whole tsp each of Hondashi and of chicken bouillon powder, both of which are made up primarily of salt and MSG?
2. Exactly when did you start your 10 minute timer?
Can i leave out the msg??

Although I would recommend soba nooddles and a bit of sake and mirin if you happen to have any!!!

ОтветитьJust made it for my supper with some changes, substituted sugar with honey, green onion with garlic instead, I don't have fish stock or chicken stock powder, so I added some soba sauce which already heavy on Katsuobushi taste, turns out perfect, I think 450ml water was too much for me, will try lesser water for more packed flavour next time. It's so easy to make and fills my supper taste needs perfectly.

ОтветитьJust made this, came out great and the family love it. Used dark shoyu, it was good but i won't use it next time. Wasnt going to buy mirin for a splash but honey did the trick. Also steaped dried mushrooms instead of dashi which was awesome! Can't wait to try this again.
