ОтветитьAs someone who loves Italian food but does NOT like cheese, I was thrilled to hear her say at the end that the dish doesn’t need cheese! Everyone in America thinks that Italian food HAS to have cheese all the time. Simply not true. Nice to have some proof.

ОтветитьMy mom taught me, she learned to cook ragu from her calabrian dad, who learned it from his mom wich herself learned it from... You get the idea. It is part of family tradition.

ОтветитьThe sparing use of sauce and no cheese is something I noticed about pasta ragu and sofritos when I visited Italy. This really makes you appreciate the subtle taste of fresh pasta. In the UK we overload pasta with heavy sauces and then smother it with cheese. It's not authentic and it's not as good for you.
