Making two apple pies. Simple, fun, and delicious.


Recipe:
Crust (one top plus one bottom crust):
3/4 cup shortening
5 tablespoons cold water
2 cups flour
1 teaspoon salt


Apple Filling:
1 cup sugar
1/3 cup flour
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon salt
8-10 apples
2 tablespoons butter dots


For the crust, mix together the shortening, flour, and salt, either with a pastry cutter or by hand. With the shortening evenly distributed through the flour begin adding water, one tablespoon at a time, and lightly tossing with a fork. The mixture will be dry, add water if needed to get it to come together but don't make it too wet. Form together into two balls, one for the bottom crust and one for the top. Roll out to the size of your pie tin, cut to shape, and lay it in the tin. Fold the edge back on itself and crimp decoratively with fingers.


For the filling, peel, quarter, core, and thinly slice the apples. Add sugar, flour, and spices. Mix well by hand. Pour the filling into the bottom crust, mounding it up since it will bake down some. Cube the butter and distribute over the top. Now add the top crust, either as a woven lattice or cookie cutter shapes.


Bake at 425 F for 15 minutes to brown the crust. Reduce to 400 F and bake for an additional 40-50 minutes, or until the filling is bubbling throughout. Let cool for several hours to allow the filling to set.


Pie crust cookies:
Take the leftover pie crust and roll it out. Spread with a thin layer of butter. Coat with brown sugar. Lightly press chocolate chips into dough, about one every inch. Roll the dough into a log and cut into 3/4 inch slices, then space them out standing up on a baking sheet. Bake for 10-15 minutes at whatever temperature your pie is baking at.
