Hello, everyone! I'm back with a new vegan dessert video. I used to be very passionate about making vegan desserts because I saw it as a challenge to create something new without using any animal ingredients. However, I eventually felt that vegan desserts couldn't quite match the flavors of those made with butter, cream, and eggs, so I took a break from them.

Recently, I decided to take on vegan dessert challenges again. I've noticed that the quality of vegan ingredients has improved significantly. There are now amazing products like potato protein from Sosa, which helps make egg-free sponge cakes spongy, and Flora Plant-Based Cream, which tastes very similar to real cream. My current focus is on creating desserts where people can't even tell they’re vegan, focusing on flavors and textures.

Anyway, I’ll cut my long story short and introduce this dessert: Earl Grey chocolate mousse with raspberry coulis. It’s vegan and gluten-free, and it tastes just like any other good chocolate mousse. If you're looking for a vegan and gluten-free dessert, this one is perfect for you!

🍫 Vegan chocolate mousse
Dark chocolate (54.5%) 170 g
Plant-based cream (for infusing) 70 g
Additional Cream (to compensate for lost infusing) 15g
Plant-based cream (Cold, Whipped) 130 g
Earl Grey tea leaves 2g
*You can definitely skip the Earl Grey tea if you want to make a simple chocolate mousse. In that case, skip the additional cream as well.

❤️Vegan raspberry coulis
Raspberry puree 150g
Sugar 75g
Agar agar 2g

🤎 Vegan chocolate glaze
54.5% dark chocolate 200g
Chopped almonds 50g
Canola oil 40g

🤍 Vegan Chantilly cream
Plant based cream 150g
Sugar 15g
Vanilla bean 1/2

*For dark chocolate, I used Callebaut 811.

*For the plant-based cream, I used "Flora Plant-Based Cream," which is available in South Korea at www.kohokr.com.
