In Florida the dolphins are getting habituated to people catching and releasing fish and they know that fish are easier to catch once people have tossed them in the water after reeling them in. They'll take a fish and even bait off a hook and very rarely get hooked.
Goliath grouper also take a lot of hooked fish and released fish, they also understand what boats mean.
