MANDARIN: TAIWAN vs. CHINA

I just came back from Taiwan as my first trip in Asia and I loved it a lot, so I want to come back and learn language but I don't know if I should learn Chinese mandarin or taïwanese Mandarin 😅

afaik, as a Beijinger, for potato, 马铃薯 is only used as like the scientific name while 土豆 is the colloquial term. In Guizhou (my dads side of family) they call potatoes 洋芋 （foreign taros).
