ОтветитьThe carrot and celery should be grated, also not enough bechamel sauce, which is meant to be spread on top of each pasta layer to keep it moist. And why no Garlic, Why no herbs??? Very strange recipe.

ОтветитьWhat are the measurements on the cheese? I'm buying things for this right now -- that said, I'm probably going to downgrade the cheese a bit, as peccorino romano is around $18/lb right now and I can't find buffalo mozzarella under that name.

ОтветитьVincenzo, my friend, when i was a young sailor, station in Yokosuka Japan, i would go to the Young Christian Center, and Pop Sturgeon would make his famous lasagna. I spent time in n the kitchen with him.
He would make his own flat pasta...me...lol would make it under his instruction. Many ingredients were not available so he would make his own.
My question is: he would use motserrella, shedded, and cottage cheese, with Parmigiano. It was great! Would you use cottage cheese or not n why?
I will cook this lasagna after two days for my daughter's birthday😊.

hi Vincenzo, I know this is 2 years after your video...but i made this tonight for my family, unfortunately had to go with the best tomato sauce I could find in the supermarket rather than make my own, and dried pasta (my supermarket only had 2 options for lasagna and both were dried), however, despite the imperfect ingredients, it came out amazing. I plan to do it again at some point once I find a source for the proper pasta and I plan to make my own tomato sauce for that one as well, thanks for the video absolutely everybody loved it! leftover Ragu is going to some kind of pasta dish for tomorrow.

when i visited a town in the Chianti region, learned how to make a Bechamel Lasagna. The woman I learned how to make it from mixed a basil pesto with the pesto. It made a lasagna the likes I had never tasted before. Only dish I've used Bechamel on.

ОтветитьGreat job Vince, looks great, have lot jars of garden tomatoes, the bees were busy this year😂🤣, hmm you use a provolone cheese, have to try, I've been adding fontina, I have to try provolone lol. Pasta is key👍, at sportsman's club they follow my recipe still, almost cuz they use dry noodles and don't boil, assemble and it cooks in oven🤷, but it's venison and they thin the sauce, turns out great but I think fresh, excuse is 500 people, no time, which game dinner does have 8 courses.

ОтветитьI'm going to make this recipe this week. I've been following your channel for a very long time now. I can cook really good Italian food now with your guidance. My carbonara is spot on, and almost the same as I have had in Rome. Tomorrow I'll buy a pasta machine to improve the quality with only fresh ingredients. Eggs directly from the farm, and flour directly from the windmill. But I have a dirty secret: I use Heinz Tomato Frito, 3 packages for the tomatoe sauce, and I'd like to ask you to do this once. It has a deeper and richer tomato flavor, since it's like a thickened Passata and always add a second glass red wine to compensate for the thickened Heinz Tomato Frito.

Good evening chef, I've finaly tested your recipe, it was a bit of work but in the end the result gave me back some memory of my visits to italy that dated back to 20 years ago, especialy Rome. It changed from the lasagnas i can find in every shop in France, the added mix of cheese within layers, I had smoked mozarella with parmigianno regiano and manchego (softer spanish pecorino my cheese seller didnt have pecorino that day). It really gave the kick and the deep flavors I remembered.
ОтветитьThis makes me feel much better, after watching this video. I made three trays of lasagna for a couple of families, making the lasagna the same way you're making yours! I was really worried if they liked it or not. I didn't add Ricotta, as I usually do, but I did add Provolone, Mozzarella (block), pecorino/parmesan, bechamel sauce, and beef, with soffrito. I didn't have a lot of tomato sauce, so it was more meat than tomato sauce. I made my own noodles, though (flour, eggs, water as needed). Thank you for making my worries melt away.
