Matcha, the expensive green powder that is the center piece of Japanese Tea Ceremony, chanoyu. For the growers in Kyoto, it's a labor of love. First Flush (ichibancha) matcha from the first Spring harvest is the result of an entire year's effort.
The best quality matcha is found in Japan, where they still use historic growing and processing methods that have been passed down through the generations.
We traveled to Uji, south of Kyoto, and met our 20th generation grower of Japanese matcha. Here we learned some of the secrets of their craft.
