there is no gamemode 3. Gamemode 0 is survival, 1 is Creative, and 2 is Adventure. you cannot choose to change your gamemode to Hardcore.

There is none, there's only /gamemode 0/s/survival /gamemode 1/c/creative and /gamemode 2/a/adventure

Hmm. Yes, I know gamemode-3 is spectator, but this video was released in November 2012, long before the 1.8 snapshots came out.

Did they think that hardcore was gamemode-3? Hardcore isn't technically a gamemode.
