ОтветитьHello. There's a somewhat new knife sharpener that I'm wondering if you've tested yet, or may have received testing request. They are "rolling knife sharpener". They state that one can sharpen "anything" with it. I'm interested in one but would like to know if they're even worth it. Please advise, ty.

I want to say I really enjoyed this video, cause it brought back memories of my dad sharpening knifes. I believe if you would've tried a test on his sharpened knifes it wouldn't or very little show any pressure. You could go very slow up your arm with a knife he sharpened and the hair's would just fall off your arm. You couldn't even put your finger on it and it would cut you.
He sharpened a surgical steel knife for my cousin and it held a edge for seven years skinning all types of animals even deers.
When I was little I was using his knife and almost cut my finger off and never felt it. If not for the bone I would've.
Wish he was still here I would've sent you a knife he sharpened.
I've only heard off one other old guy that could do it so good. He's gone now to.
He tried to show me but just couldn't get the hang of it.
Can you do a Horl vs Tumbler test. Which one is best and can it beat the others you tested.

ОтветитьI have personally tried some version of almost all of these systems. For my money the best is the Chef's Choice Trizor (not reviewed here). It is quite effective, requires almost no setup, and is nearly idiot proof. The easiest is the Horl German system (not reviweed here) and with a little effort it can also get you as sharp or sharper than any of them. It is fairly easily the quickets to get out and use and pack back up. The Ken Onion Worksharp is also great but not idiot proof and the knives can be permanently damaged fairly simply.

ОтветитьI have been using TSPROF Profile K03 for 2 years. It allows you to sharpen longer blades than Blitz, although not as technologically advanced and compact. Yes, it was expensive, but it was worth it :)

ОтветитьYou might have mentioned the Spyderco Sharpmaker too. Not very sophisticated, but for my less expensive kitchen knives it puts on a good edge and doesn’t take off a lot of steel in doing so. For my high-end (Chaves, Mordax, Benchmade, Hogue) folders and autos, I would only use the Wicked Edge. You featured the most expensive model, but you can get less expensive WIcked Edge models that are just as accurate and easy to use. Expensive, but as you demonstrated, the best and again, you get accuracy with a minimal loss of steel.

ОтветитьВ России заточные приборы от TSPROF, "Profil" и "Blitz", это одни их самых лучших массовых (то есть не кастомных) приборов для заточки ножей с любым профилем клинка: клин, "линза" (конвекс), сканди.
Для мелких правок рекомендуются мусаты, особенно от Лански.
А задроты используют водные камни. Также некоторые пользуются наждачной бумагой разной степени абразивности.
Неважно, чем ты точишь нож, главное - чтобы ты умел это делать, инструмент лишь помогает этого добиться с большим комфортом 😁

ОтветитьVery informative video...as are thr other installments. But im not quite sure you did the tormek justice....unless you just didnt mrntion in video. The standard stone is roughly 220-240 grit....from there you are supposed to use the dressing stone which creates a 1000 grit surface...from there you go to leather wheel....im certain if that progression is used the outcome will be different....just my .02

ОтветитьI have a KME a worksharp( original not ken onion) wicked edge field kit and some others. The KME is my favorite especially for rhe money. It is USA made by a vet. The customer service is outstanding.

Honestly any professional working with knives has no time messing with clamps and screws etc. Even if the system can achieve razor sharpness its just impractical.
ОтветитьThat Russian one looks beautiful and is a work of art but my God it seems like 0 thought was put into the actual end use. It just seems overly complex and annoying to use. You should not have to get out a digital protractor to know what your sharpening angle is for your ~$400 sharpening system, nor measure your stone thickness. Sharpening is fun for me personally, but it can quickly become a chore if you have multiple knives to maintain on an on going basis. When I sit down to sharpen, I want my system to have as little extra annoyance as possible. Although, if anything I think it's safe to say the Russian one shows how ridiculously overpriced the wicked edge is. If they can sell basically a solid block of aluminum with all that milling work and nice big diamond stones for $380, then I don't know what universe the wicked edge is worth it's $900 asking price.

ОтветитьA couple years back you sold me on the wicked edge: I truly wanted to buy once and cry once on a lifetime sharpener. 2 years later I am still extremely pleased with the wicked edge, and so is the wife with her kitchen knives.
